A cutting board is a flat, food-safe work surface used for chopping, slicing, dicing, and mincing ingredients, typically made of wood, plastic, bamboo, or composite material. Wood and bamboo dull knife edges less than glass or stone and are the traditional choice, but plastic's nonporous surface is easier to sanitize, which is why many kitchens reserve plastic boards for raw meat and use wood or bamboo for produce. Regular oiling for wood boards, along with washing separate boards for raw and ready-to-eat foods, helps prevent cracking and cross-contamination.
