• 1 tsp (3g) active dry yeast
• 100 g (1 cup) bread flour or flour type 00, for the dough
• 120 ml (1 cup) water, for the dough
• 1 tsp (3 g) salt
• 1 tbsp olive oil
• semolina flour, for dusting
• 1 tbsp olive oil, for brushing the dough
• 2 tbsp pesto genovese
• 200 g (7 oz) mortadella
• 2 burrata cheesees
• 2 tomatoes
• 2 handfuls of arugula
