Cocoa Cheeseburgers - Sutter Home Family Vineyards

Ingredients

• 1 cup dry red wine
• 3 ounces chopped bittersweet chocolate
• 2 tablespoons unsweetened cocoa powder
• 4 tablespoons coarsely chopped fresh mint
• 6 ounces coarsely chopped pancetta (Italian bacon)
• 1 cup finely chopped onion
• 1/2 cup finely chopped celery
• 1/2 cup finely chopped peeled carrots
• 6 garlic cloves, minced
• 2 pounds ground chuck
• 2 teaspoons of salt
• 2 teaspoons freshly ground pepper
• 12 slices of Italian bread
• Olive oil
• 6 – 1/4 inch thick slices of Gorgonzola cheese
• Sliced beefsteak tomatoes
