Jamaican Beef Stew Recipe

- 2 cups chicken stock
- 3 tablespoons ketchup
- 1 tablespoon soy sauce
- 2 bay leaves
- 2 medium carrots, peeled and sliced diagonally into 1/4 inch rounds
- 2 medium russet potatoes, peeled and cut into 3/4 to 1 inch chunks
- 1/2 cup sliced scallions, plus more for garnish
- 1/2 red bell pepper, sliced
- 1/4 cup sliced onion
