Ingredients

• 100 ml olive oil
• 50 ml red wine vinegar
• 25 ml juice of one lemon
• 1 large clove garlic, crushed
• 1 pound cheese tortellini, cooked well
• 150 g cherry tomatoes
• 75 g celery, thinly sliced and celery leaves
• 50 g red onion, diced
• 30 g curly parsley, coarsely chopped
• 500 g Maine lobster meat
• salt and pepper, to taste
