Ingredients

  • 2 lbs beef chuck roast, or tri-tip roast
  • 1/4 cup all-purpose flour
  • Salt and freshly ground black pepper
  • 2 tablespoons extra-virgin olive oil
  • 1 large red onion, sliced into ½ moons
  • 4 carrots, peeled and cut into 1-inch pieces
  • 4 celery stalks, cut into 1-inch pieces
  • 3 cloves garlic, sliced
  • 1 cup dry red wine (we use Pinot Noir in the PNW)
  • 1 tablespoon Charred Chive Dulse Sauce
  • 1 1/2 lbs (about 5) medium russet potatoes, quartered
  • 1 can (14.5 ounces) green beans
  • Sprigs of fresh rosemary and thyme, bay leaf tied together (bouquet garni)
  • 3 cups beef stock
  • 1 tablespoon salted butter
  • 1 tablespoon all-purpose flour
  • 1 cup beef stock
