To make a really stunning and delicious mac �n� cheese � one that deserves to be served with Champagne � I add wine to the cheese sauce and chilli to the breadcrumb topping

Ingredients
- 50 grams butter
- 1/4 cup flour
- 1/4 cup white wine
- 2 cups milk
- 1 bay leaf
- 1/2 teaspoon salt, plus extra for cooking the pasta
- 1/4 teaspoon white pepper
- 2 cups grated mix of cheddar and parmesan cheese
- 250 grams dried elbow macaroni
- 1 cup fresh breadcrumbs
- 1 cup grated gruyère cheese
- 1/4 teaspoon ground chilli
- 1 lemon, zest only
- 2 tablespoons parsley, finely chopped
- 2 tablespoons olive oil
