Ingredients

• 1 lb ground beef
• 2 hatch green chiles (roasted, peeled, and chopped)
• 1 zucchini, diced
• 2 medium potatoes, peeled and diced
• ¼ white onion, chopped
• Salt and pepper to taste
• 1 tablespoon oil
• 5 tomatillos, husked and rinsed
• 3 serrano peppers (adjust to heat preference)
• ¼ white onion
• 2 garlic cloves
• Pinch of salt
• ½ cup of water (for blending)
