Ingredients

• 3 tbsp Lurpak® Plant Based
• 2 onions, finely diced
• 3 garlic cloves, crushed
• 2 aubergines, chopped into 3cm cubes
• 1 tsp cumin seed, toasted and ground
• 1 tsp coriander seeds, crushed, toasted, and ground
• 800 g crushed tinned tomatoes
• 2 tbsp rose harissa
• 800 g tinned chickpeas in water
• 2 bunch of rainbow chard, shredded
• 1 bunch of flat-leaf parsley, roughly chopped
• 1 bunch of mint, roughly chopped
• 1 bunch of dill, roughly chopped
• Crusty bread
