Thai Cucumber Toast -

Ingredients

• Dressing
• 1/4 cup rice vinegar
• 3 tablespoons sugar
• 1/2 tsp salt
• 1 tsp toasted sesame oil
• 1 tsp soy sauce
• 1/2 teaspoon red pepper flakes
• Cucumber Salad
• 1 large cucumber, thinly sliced
• 1/2 red onion, thinly sliced
• 1/3 cup chopped peanuts
• 1 tbsp toasted sesame seeds
• Other Ingredients
• 1/2 cup Farmer Cheese
• 1 garlic clove, minced
• 2-4 slices of toasted bread
• few cilantro leaves for garnish
• 3 tbsp crushed peanuts
