STRAWBERRY SUMMER SALAD WITH MINT AND FETA – Life is Better with Fruit & Vegtables

Ingredients

• 1 tbsp Olive oil
• 125g Feta cheese, crumbled
• 1 Bunch of asparagus, woody ends trimmed, cut into 5cm lengths
• 50g Mixed salad leaves
• 40g Spinach
• 1 Punnet of strawberries, quartered or halved
• 4 Red radishes, thinly sliced
• A handful Mint, chopped
• 1 Chilli, deseeded and finely chopped
• 4 Large strawberries, finely chopped
• 1 tsp Dijon mustard
• 1 tsp Honey
• 2 tbsp Red wine vinegar
• 2 tbsp Extra virgin olive oil
