• 2 carrots, peeled and finely diced
• 2 tsp minced garlic
• 3 chicken thigh fillets, trimmed and each cut into 4 pieces
• 2 tbsp tomato paste
• 4 tbsp red wine
• 2 sprigs thyme
• 200g mushrooms, finely diced
• 2 x 400g cans salt reduced crushed tomatoes
• 1/2 cup chicken stock
• 50g roughly chopped pitted black olives
• 2 bay leaves
• 2 tbsp balsamic vinegar
