Ingredients

  • 1 whole chicken (about 900g)
  • 4 ginger slices
  • 2 stalks spring onion
  • 1 tbsp cooking wine
  • Peanuts (toasted, finely chopped)
  • Sesame seeds (toasted)
  • Large bowl of ice water (enough to immerse the chicken)
  • 2 slices of ginger
  • 2 star anise
  • 1 tsp cumin
  • 4-6 dried chilli
  • 2 bay leaves
  • 1 tsp Sichuan peppercorn powder
  • 4-5 grains Sichuan peppercorn
  • 2 tbsp chilli powder
  • 1 ½ tsp Chinese five spice powder
  • 1 tbsp sesame seeds
  • 4-6 tbsp red chilli oil
  • 2 tbsp black vinegar
  • 1 tbsp sesame oil
  • 2 tbsp cooking wine
  • 2 tsp sugar
  • ½ tsp of salt
  • 1 tbsp light soy sauce
  • 2 garlic cloves (minced)
  • ½ tbsp spring onion (minced)
