Karen's Corn Salsa - A Zest for Life

Ingredients

• 1 large ear fresh corn
• 2 tablespoons white wine vinegar
• 2 tablespoons pure cane sugar
• ¼ cup yellow bell pepper, cut into 1/2" pieces
• 2 teaspoons fresh garlic, peeled, chopped
• 1 teaspoon fresh jalapeño, chopped ~ for mildly spicy, add more if you like
• 1 ½ teaspoons fresh lime juice
• 2 pinches sea salt, or to taste
• 2 teaspoons fresh parsley, or cilantro cleaned and chopped
