Ingredients

  • 1 Sea Bream (or other white fish)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 tablespoons pesto
  • 2 tablespoons white wine
  • 2 tablespoons lemon juice
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 teaspoon freshly chopped parsley
  • Lemon wedges, for garnish (optional)
  • Sea Bream with Pesto: Step-by-Step Method
  • Preheat oven to 200°C (392°F) or prepare a non-stick skillet for stovetop cooking
  • Rinse the sea bream under cold water and pat dry with paper towels
  • Season sea bream all over with salt and pepper
  • Drizzle 1 tablespoon olive oil evenly over the fish, ensuring both sides are lightly coated
  • Place sea bream onto a baking dish or prep it for cooking in the skillet
  • In a small bowl, mix together pesto, white wine, and lemon juice until well combined
  • Spoon or brush the pesto mixture evenly over the top of the sea bream
  • Mince garlic finely if not already done
  • Dot the fish with butter and sprinkle minced garlic evenly over the top
  • Place the sea bream in the oven (or pan), baking (or cooking covered on stovetop over medium heat) for 15–20 minutes, or until just cooked through and flesh flakes easily
  • While the fish cooks, finely chop fresh parsley and cut lemon wedges for garnish
  • Remove the fish from heat and let rest for 2 minutes
  • Carefully transfer the sea bream to a serving plate
  • Spoon any pan juices over the fish for added flavor and moistness
  • Sprinkle with chopped parsley before serving
  • Garnish with lemon wedges on the side
  • Serve immediately, ideally with a light seasonal salad or simple steamed vegetables
