• 250 g cold unsalted butter, cubed into small pieces
• 500 g plain flour
• 1 tsp fine sea salt
• 50 g icing sugar
• 100 ml icy old water
• 3 tsp vinegar
• 10 apples, peeled, cored and cut into small pieces
• 100g light brown sugar
• 3 tsp cinnamon
• 1 tsp vanilla essence
• 2¼ tbsp cornstarch
• 1½ tbsp lemon juice
• 50g unsalted butter
