Ingredients

• 1/2 cup vegetable oil (or substitute half with unsweetened applesauce)
• 1 1/2 cup sugar
• 2 tsp vanilla
• 2 cups flour
• 1/2 cup unsweetened cocoa powder
• 1 1/2 tsp baking soda
• 1 tsp salt
• 2 cups grated zucchini
• 1/2 cup toasted chopped nuts (optional)
