Southern-Style Meatloaf

Ingredients

• 1 tablespoon butter, cooking oil, or bacon drippings
• 1.5 cups diced onion
• 1/2 cup chopped sweet bell pepper
• 1 tablespoon minced garlic
• 2 pounds ground beef
• 1 teaspoon kosher salt
• 1 teaspoon cracked black pepper
• 1/2 teaspoon Cajun or Creole seasoning
• 1/2 teaspoon paprika
• 1/2 teaspoon dried thyme
• 1 teaspoon dried basil
• a pinch dry mustard
• 1/2 cup ketchup (plus an additional 1/2 cup for glaze)
• 1 teaspoon Worcestershire sauce (plus an additional 1/2 teaspoon for glaze)
• 3 slices white bread
• 1/3 cup milk
• 2 large eggs (beaten)
• 2 tablespoons light brown sugar
