Ingredients: 2 TBL olive oil; 1 large onion; 4 tablespoons chopped walnuts taosted (heat in 350 degree oven 8-10 min til fragrant and then cool); 3/4 cup bread cubes (I use italian type or Panerra fresh bread, cut into 1/2 inch slices and then cubes and then baked in a 350 oven until toasted); 2 ripe plum tomatoes chopped; 2 TBL chopped fresh basil; 2 TBL blasamic vinegar; 2 center cut salmon fillets each weighing 8-9 ounces
