• 2 cups zucchini, grated, pressed to remove water
• 2 eggs, lightly beaten
• 1/2 cup feta cheese, low-fat, crumbled
• 1/4 cup red pepper, diced
• 1/2 cup chickpeas, drained and rinsed, mashed
• 1/4 cup green onion, chopped
• 1 clove garlic, minced
• 1/2 cup bread crumbs, plain
• 1/4 cup parsley, chopped
• 1/4 cup olive oil
• 6 tablespoons hot marinara sauce
• 6 hamburger buns, whole wheat
• 2 tomatoes, sliced
• 5 ounces lettuce or mixed baby greens
