Ingredients

• 1 medium onion, chopped
• 6 tablespoons butter
• 2 ⨯ 14-ounce cans diced tomatoes
• 1 ⨯ 46-ounce bottle or can tomato juice
• 3 – 6 tablespoons sugar
• 1 – 2 tablespoons chicken base, or 3 chicken bouillon cubes
• 1 Freshly ground black pepper
• (optional) 1 cup sherry
• 1½ cups heavy cream
• ¼ cup chopped fresh basil
• ¼ cup chopped flat-leaf parsley
