Ingredients

• 6 cups potatoes, peeled and diced
• 1 cup carrots, diced
• 1 cup celery, chopped
• 1 small onion, chopped
• 4 cups chicken broth
• 2 cups milk
• 1/2 cup heavy cream
• 1 tsp salt
• 1/2 tsp black pepper
• 1/2 tsp thyme
• 2 tbsp butter
