Ingredients

  • 1 center-cut salmon fillet (2 pounds), preferably skin-on
  • ½ cup soy sauce
  • ¼ cup mirin
  • ¼ cup sake
  • 3 tablespoons sesame oil
  • 2 tablespoons Worcestershire sauce
  • 3 scallions, trimmed and thinly sliced (set aside 3 tablespoons scallion greens for garnish)
  • 1 tablespoon minced fresh peeled ginger
  • 1 clove garlic, minced
  • Reserved marinade from above
  • ½ stick (4 tablespoons) unsalted butter
  • ¼ cup dark brown sugar
  • 1 tablespoon sriracha
  • ½ teaspoon freshly grated lemon zest
  • 1 tablespoon fresh lemon juice, or to taste
  • Freshly ground black pepper and a little salt if needed
