Ingredients

• 2 - 3 tablespoons Ontario butter
• 1 shallot, finely chopped
• 3 cloves garlic, minced
• 2 cups Ontario milk
• 1 cup Ontario Heavy Cream (35% Whipping Cream)
• 1 tsp salt (adjust to your liking)
• 1 tsp black pepper (adjust to your liking)
• 1 sprig thyme
• 1 cup Ontario white cheddar, grated
• 1 cup Ontario Swiss-style cheese, grated
• 6 large yukon gold potatoes, peeled and thinly sliced
• 1 bunch fresh chives, finely diced
