I do a lot of different ice-creams, and you do need an ice-cream maker for this one (I love my Cuisinart one but any will do).
Ingredients
- 200ml cream
- 300ml semi-skimmed milk
- 60g golden caster sugar
- 1 vanilla pod
- 3 large egg yolks
- 50g golden caster sugar
- 125ml/4fl oz of the cream mixture
- 3tbsp double cream
- 250g dark chocolate (at least 70% cocoa)
- 2tbsp golden syrup
- 2tsp brandy
- 1 tsp ground cinnamon
