Barley Risotto - Rombauer Vineyards

Ingredients

• ¼ cup (1/2 stick) butter
• 1 1/3 cups finely chopped onion
• 8 ounces shiitake mushrooms, stems removed, caps diced
• 1 cup pearl barley
• 2/3 cup dry white wine
• 1 tablespoon mashed or finely minced garlic
• ½ teaspoon salt
• ½ teaspoon black pepper
• 8 cups chicken broth
• ½ to 1 cup grated Parmesan cheese
• 2-3 tablespoons chopped parsley or
• 1 to 2 teaspoons chopped thyme
