Ingredients: What you’ll need..; - 1/2 red onion; - 2 cloves of garlic; - 1 tin chopped tomatoes; - 1 tin sweet corn; - 1 tin kidney beans; - 1/2 sweet potato; - 1.5 tsp cumin 1 tsp Smokey paprika 1/2 tsp chilli powder 1/2 tsp dried corriander 1/2 tsp cinnamon; - 1 tbsp tomato purée; - 1 tbsp soy; - 1 tsp honey; - I added a couple drops of jalapeño hot sauce (optional); - 1 stock cube (veggie or meat) with 2 tins worth of water; - salt and pepper; - to serve: fresh corriander, nachos, grated cheese and sour cream
