Leek patties, or keftas de prasa, are commonplace throughout the Jewish Sephardi world -- in Turkey, Bulgaria, Greece, Romania and elsewhere.
Ingredients
- 6 to 8 leeks (about 2 pounds), white and light-green parts, cut into 1-inch sections
- 1 large potato, peeled and quartered
- 1/2 pound ground beef (optional)
- 2 large eggs, lightly beaten
- 3 tablespoons breadcrumbs or matzo meal, or more as needed
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Vegetable oil or olive oil, for frying
- 2 lemons, cut into wedges
