Ingredients

  • 2 tablespoons olive oil (30 ml)
  • 1 large yellow onion, chopped (approx. 1 cup)
  • 2 cloves garlic, minced (approx. 2 teaspoons)
  • 1 red bell pepper, chopped (approx. 1 cup)
  • 1 jalapeño, seeded and minced (optional, for heat)
  • 1 teaspoon ground cumin (5 ml)
  • 1 teaspoon chili powder (5 ml)
  • 1/2 teaspoon smoked paprika (2.5 ml)
  • 1 (28 ounce/800g) can crushed tomatoes
  • 6 cups chicken broth (1.4 liters), low sodium preferred
  • 1 (15 ounce/425g) can black beans, rinsed and drained
  • 1 (15 ounce/425g) can corn, drained (canned, frozen, or fresh all work!)
  • 1 pound boneless, skinless chicken breasts (450g)
  • 1 lime, juiced
  • Salt and black pepper to taste
