Mediterranean Poached Eggs with Chicken Sausage

Ingredients

• 2 tablespoons olive oil
• 1 medium onion, yellow diced
• 1 medium green pepper diced
• 1 teaspoon cumin
• 1 teaspoon smoked paprika
• 1/2 teaspoon hot pepper sauce omit for a more savory dish
• black pepper, freshly ground
• 1 pound LDF Chicken Sausage cut into 1 inch chunks
• 1 large can Diced tomatoes 20 ounce can
• 8 large LDF Eggs cracked into small bowl
• 3 ounces Feta cheese crumbled
