Delicious Turkey Gravy Recipe

Ingredients

• 2 Tbsp. olive oil
• 1 carrot, chopped
• 1 rib celery, chopped
• 1 onion, chopped
• 2 cloves garlic, smashed
• Chopped turkey neck
• ½ cup dry sherry, dry white wine, or apple juice
• 4 cups low-sodium chicken broth
• 1 tsp. whole black peppercorns
• 4 sprigs fresh thyme
• 4 sprigs fresh parsley
• 2 fresh bay leaves
• Reserved turkey drippings ( see Herb-Butter Roasted Turkey recipe )
• 4 Tbsp. unsalted butter
• ½ cup all-purpose flour
• 2 cups low-sodium chicken broth
• ¼ cup chopped fresh parsley
• Salt and black pepper to taste
