Bacon-Tomato-Gruyere Omelet Recipe - Cooking Index
One day I remarked to Keith, a chef who had been with me for many years, that I always seem to be putting cheese in my omelettes. He said, An omelette without cheese is a day without sunshine!
Ingredients
- 2 teaspoons 10ml Clarified butter
- 1 oz 28g Cooked bacon - (1 1/2 slices) - cut 1/2" pieces
- 3 Eggs
- 1 oz 28g Grated Gruyere cheese - (1/4 cup) = (don't pack it down!)
- 1 oz 28g Plum tomato - (1/2 small) - seeded, and Cut into 1/4" cubes
