- 1 Onion
- 1-2 tbsp Olive Oil
- 2 Cloves Garlic
- 300g Risotto Rice
- 700ml Vegetable Stock
- 200ml Milk
- 150g Mushrooms (I prefer chestnut)
- 180g Cooked Whole Chestnuts
- 1tsp Thyme
- 100g Garlic and Herb Soft Cheese (such as Boursin)
