• 1 red onion, finely diced (1 medium)
• 2 jalapeños, seeded and minced (adjust to taste)
• 1 bunch cilantro, roughly chopped (about 1/2 cup, packed)
• 1 avocado, diced (optional, add right before serving)
• 1/4 cup red wine vinegar (60ml)
• 1/4 cup olive oil (60ml)
• Juice of 2 limes (about 4 tablespoons, 60ml)
• 1 teaspoon ground cumin (5ml)
• 1/2 teaspoon chili powder (2.5ml)
• 1/2 teaspoon garlic powder (2.5ml)
• Salt and freshly ground black pepper, to taste
