Ingredients

• 4 Exceldor chicken breasts, diced
• 1 red onion, finely chopped
• 3 cloves garlic, minced
• 3 oz. (90 ml) butter
• 4 tsp. (20 ml) curry paste
• 2 tsp. (10 ml) garam masala
• 2 tbsp. (30 ml) fresh ginger, grated
• ½ cup (125 ml) plain Greek yogurt
• 1 cup (250 ml) cashews (soak them overnight)
• ⅔ cup (170 ml) tomato paste (or 1 half-tube tomato paste)
• 2 cups (500 ml) coconut milk *
• 2 tbsp. (30 ml) maple syrup
• 1 cup (250 ml) rice
• Juice and zest of 1 lime
• Fresh herbs (cilantro, parsley or mint) to taste
• Salt and pepper to taste
