LOLA’S ISLAND PINEAPPLE CAKE – Lola's Grab a Bite

Ingredients

• 1 cup Coconut Milk
• 2 cups Flour (all purpose)
• 1 tbsp Almond Essence
• 1 tsp Cinnamon Powder/Nutmeg or Baking Spice
• 2 tbsp Baking Powder
• 1 pinch Salt
• 4 tbsp Butter (soften)
• ½ cup Brown Sugar
• 1 Egg (small,room temp)
• Pineapple slices (enough to cover the surface of the baking pan )
• 1 Banana (thin slices)
• 2 tbsp Soften Butter
• 1 tsp Nutmeg
• 2 tbsp Brown Sugar
