• 4 granny smith apples, peeled, cored and each cut into 8 slices
• 150g butter
• 1½ cups (330g) caster sugar
• 1¾ cups (260g) flour
• 1½ teaspoons baking powder
• 1 teaspoon salt
• ½ teaspoon pure vanilla extract
• ½ teaspoon lemon zest, grated
• 2 large eggs
• 1 cup (250ml) buttermilk
• 150g mascarpone
• 1 vanilla bean, seeds scraped
• 2 tablespoon icing sugar
