Ingredients

• 4 egg whites
• 225g castor sugar
• pinch salt
• juice of ½ lemon
• 5ml (1 tsp) vanilla essence
• <h3>Poached sweet melon</h3>
• 500ml (2 cups) rosé
• juice of 1 lemon
• seeds of 1 vanilla pod
• 1 sweet melon, flesh scooped out using a melon baller
• <h3>Vanilla yoghurt</h3>
• 250g double-cream yoghurt
• 40g icing sugar, sifted
• handful raspberries, to serve
• 10ml (2 tsp) pink peppercorns, crushed, to serve
