Spicy Noodle and Pork Soup | RICARDO

Ingredients

• 1 pork tenderloin, cut in half lengthwise and sliced thinly
• 1/2 tsp (2.5 ml) sambal oelek, or less, to taste
• 2 tsp (10 ml) toasted sesame oil
• 2 tbsp (30 ml) olive oil
• 6 green onions, thinly sliced
• 1 garlic clove, finely chopped
• 5 cups (1.25 litres) chicken broth
• 2 cups (300 g) sweet potato, peeled and diced (about 1 potato)
• 4 slices fresh ginger, peeled
• 1 star anise
• 1 package 200 g cooked udon noodles (see note)
• 1/4 cup (10 g) fresh cilantro leaves
