- 2½ oz (60g wholewheat flour)
- ½ level teaspoon baking powder
- ¼ teaspoon salt
- 1 large egg, lightly beaten
- 1½ (40g) golden caster sugar
- 3fl oz (75ml) whole milk
- 2oz (50g) butter, melted and cooled slightly
- 6oz (175g) luxury mincemeat
- 6 glace cherries (mixed colours) or other crystallised fruit, finely chopped
- 10 demerara sugar cubes, coarsely crushed
- 1 level teaspoon ground cinnamon
- good grating of nutmeg
