Chicken breasts stuffed with pear, dried cranberries, and pine nuts, and glazed with maple and citrus. Very nice.
Ingredients
- 4 chicken breasts
- 3 <span data-teams="true"> pears, peeled and cubed</span>
- 60 ml (1/4 cup) <span data-teams="true">whole roasted almonds</span>
- 1 shalott, finely chopped
- 125 ml (1/2 cup) <span data-teams="true">cream cheese (goat, Boursin, cream cheese)</span>
- Salt and freshly ground pepper, to taste
- 125 ml (1 tablespoon) <span data-teams="true">fresh rosemary or thym</span>
- 125 ml (1/2 cup) maple syrup
- 45 ml (3 tablespoons) orange juice
