Sweetcorn soup with fried tortilla topping

Ingredients

• 1 medium onion, finely chopped
• 1 tablespoon extra virgin olive oil
• 1 tablespoon water
• 1 clove garlic, crushed
• 1 tablespoon ginger, peeled and grated
• 4 cobs sweetcorn
• 2 medium agria potatoes, peeled and diced)
• 3/4 teaspoon salt
• 1 1/4 litres vegetable stock or water
• 100 millilitres cream
• 2 soft wheat tortillas
• 1 tablespoon olive oil
• flaky sea salt and smoked paprika, for sprinkling
• 1 lime, finely grated zest
