Ingredients

• 1 cup pecans or walnuts
• 2 ½ cups grated carrots
• 4 large eggs(around 200g) at room temp
• 2 cups cake flour
• 1 teaspoon bicarbonate soda
• 1 ½ teaspoon baking powder
• ½ salt
• 1 ½ teaspoon ground cinnamon
• ½ ground all spice
• ½ teaspoon Elachi (cardomom) powder
• ¼ teaspoon ground ginger
• 1 ½ cups sugar
• 2 teaspoons vanilla essence
• 1 cup oil
• 1 cup drained crush pineapple (1 can)
• 7 tablespoons unsalted butter
• 1 ½ cups icing sugar
• 1 teaspoon vanilla essence
• 1 teaspoon freshly squeezed lemon juice
• 340g cream
