Ham Cooked in Hay | Oregonian Recipes
There are two methods given for this recipe: One is simmered on the stove, the other is baked in the oven.
Ingredients
- 1 pound organic hay (preferably alfalfa or timothy hay; see note), soaked in water for at least 24 hours
- 1 fresh (uncooked) ham of any size
- 10 juniper berries
- 5 whole cloves
- 2 sprigs fresh thyme
- 10 black peppercorns
- 3 bay leaves
- 1 cup maple syrup
