Mexican Chocolate Soufflés & Tequila-Chipotle Crème Anglaise

Ingredients

• 10 ounces excellent quality Mexican chocolate (such as Ibarra), finely chopped
• ¾ cup heavy cream
• 4 tablespoons sugar
• 2 tablespoons unsalted butter
• 2 tablespoons reposado tequila
• 1 tablespoon vanilla extract
• 2 teaspoons cinnamon
• ½ teaspoon ground cayenne
• ¼ teaspoon salt
• 6 large eggs, separated
• Pinch of cream of tarter
• Confectioner's Sugar as a garnish
