Mushroom Pie - The Way You Cook

Ingredients

• 2 cups AP flour
• 4 oz cold unsalted butter, diced
• 1/2 ts kosher salt
• 1/3 cup cold water
• 10 oz baby bella mushrooms, washed in cold water if needed, chopped
• 1 leek, white and pale green part, cut lengthwise and sliced
• 4 sprigs of fresh thyme
• 1/3 cup heavy cream
• 1 egg, beaten with 2 drops of water
• Olive oil
• Salt, black pepper to taste
