Vegan White Bean Soup - Brand New Vegan

Ingredients

• 1 yellow onion - about 2 cups diced
• 2 carrots - about 1 cup chopped
• 2 ribs celery - about 1 cup diced
• 2-3 cloves garlic, minced
• 2 tsp basil
• 1 1/2 tsp Sage
• 1/4 tsp salt
• 1/4 tsp black pepper
• 3 1/2 cups low sodium vegetable broth
• 1/2 cup unsweetened almond milk
• 3 cans white beans (15oz cans navy, great northern, or cannellini)
• 1 can diced tomatoes (15oz)
• 3 handfuls baby spinach
