Alper Sarikaya — Tortilla Soup

Ingredients

• 2 tbsp olive oil
• 2 shallots , medium, peeled and chopped
• 1 lb sweet potatoes , diced in 1/4 inch pieces
• 1 can corn
• 2 jalapeno , small, seeds and ribs removed and finely chopped
• 3 garlic , large, peel and minced
• 2 14.5 oz cans black beans , drained
• 1 14.5 oz can tomatoes , diced
• 4 C vegetable broth
• 1/4 C fresh cilantro , chopped
• 2 tsp cumin , ground
• 1.5 tsp chili powder , ground
• 2 tbsp white vinegar
• kosher salt , to taste
• corn chips or tortillas , for topping
