Ingredients

• 2 slice(s) applewood smoked bacon, thick cut & diced
• 2 slice(s) vidalia onion, thinly sliced & diced
• 1 tablespoon(s) yellow sweet pepper, diced
• 3 small mushrooms, diced (i use portabella)
• 1 small clove garlic, minced fine
• 1 - handful of fresh spinach
• 3-4 tablespoon(s) cheese of your choice shredded (i use colby & swiss) adjust to your liking
• ## EGG MIXTURE
• 3 large eggs (i use organic brown)
• 3 tablespoon(s) heavy cream
• 1 teaspoon(s) freshly ground pepper
• 1/4 teaspoon(s) dill, crushed
• 1 sprig(s) fresh parsley, minced
