Roux

Ingredients

• 285g (2 cups) plain flour
• 1/2 tsp bicarbonate of soda
• 1/4 tsp salt (plus more for the top of the cookies)
• 225g (2 sticks) unsalted butter at room temperature
• 300g (1 1/2 cups) caster sugar
• 50g (1/4 cup) packed soft brown sugar
• 1 large egg at room temperature
• 1 1/2 tsp pure vanilla extract
• 2 tbsp water
• 170g (6oz) dark chocolate chopped into irregular bite size pieces
